Ingredients

For the Pasta:

  • 12 oz (340 g) elbow macaroni
  • 1 teaspoon salt (for boiling water)

For the Cheese Sauce:

  • 4 tablespoons (1/4 cup) unsalted butter
  • 4 tablespoons all-purpose flour
  • 3 cups whole milk (warm)
  • 1 cup heavy cream (optional for extra creaminess)
  • 2 teaspoons Dijon mustard
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika (optional for flavor)
  • Salt and black pepper to taste
  • 2 ½ cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese

Optional Topping:

  • 1 cup breadcrumbs (panko recommended)
  • 2 tablespoons butter, melted
  • ¼ cup grated Parmesan cheese

Instructions

1. Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Add macaroni and cook until al dente (slightly firm to the bite), about 7–8 minutes.
  3. Drain and set aside.

2. Make the Cheese Sauce

  1. In a large saucepan, melt butter over medium heat.
  2. Stir in the flour and whisk constantly for about 1–2 minutes to create a roux (paste).
  3. Gradually add the warm milk, whisking continuously to prevent lumps. Add the heavy cream if using.
  4. Bring the mixture to a gentle simmer, allowing it to thicken slightly.
  5. Stir in Dijon mustard, garlic powder, smoked paprika, salt, and pepper.
  6. Reduce the heat to low and add the cheddar, mozzarella, and Parmesan cheeses in batches. Stir until smooth and creamy.

3. Combine Pasta and Sauce

  1. Add the cooked macaroni to the cheese sauce and stir until well coated.
  2. Transfer to a large, greased baking dish if baking, or serve directly if skipping the baked topping.

4. Optional: Add Topping and Bake

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, combine breadcrumbs, melted butter, and Parmesan cheese.
  3. Sprinkle the mixture evenly over the macaroni and cheese.
  4. Bake for 20–25 minutes, or until the topping is golden and crisp.

5. Serve and Enjoy

Garnish with fresh parsley or a sprinkle of paprika if desired. Serve hot and enjoy!

Tips for the Best Mac and Cheese

  • Use freshly shredded cheese for the creamiest sauce; pre-shredded cheese often has anti-caking agents that can affect texture.
  • Experiment with cheese blends! Gruyère, Monterey Jack, or Gouda work wonderfully.
  • For added flavor, mix in cooked bacon, caramelized onions, or sautéed mushrooms.

This recipe is a surefire way to satisfy your comfort food cravings. Whether baked or stovetop, it’s rich, creamy, and irresistibly cheesy!
