Classic Chili Recipe

Ingredients:
- 2 tbsp olive oil
- 1 lb (450g) ground beef (or ground turkey for a leaner option)
- 1 medium onion, diced
- 1 bell pepper, diced (red, green, or a mix)
- 3 cloves garlic, minced
- 1 (14 oz) can diced tomatoes (fire-roasted if available)
- 1 (14 oz) can tomato sauce
- 1 (6 oz) can tomato paste
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can black beans or pinto beans, drained and rinsed
- 1 cup beef broth (or chicken broth for a lighter version)
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper (optional, for extra heat)
- 1 tsp dried oregano
- 1/2 tsp sugar (to balance acidity)
- Salt and black pepper to taste
Optional Toppings:
- Shredded cheddar cheese
- Sour cream
- Chopped green onions
- Diced avocado
- Crushed tortilla chips
Instructions:
- Prepare the Base:
Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced onions and bell peppers. Sauté until softened, about 5 minutes. Stir in the minced garlic and cook for another minute. - Brown the Meat:
Push the vegetables to one side of the pot and add the ground beef (or turkey). Cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat if needed. - Add Spices:
Sprinkle the chili powder, cumin, smoked paprika, cayenne pepper (if using), oregano, and a pinch of salt and pepper over the meat and vegetables. Stir well to coat everything in the spices. - Build the Chili:
Add the diced tomatoes, tomato sauce, tomato paste, and beef broth. Stir until combined. - Add Beans:
Stir in the kidney beans and black beans (or pinto beans). Add sugar to balance the flavors. - Simmer:
Bring the chili to a boil, then reduce the heat to low. Cover and simmer for at least 30 minutes, stirring occasionally. For deeper flavors, simmer for 1-2 hours. - Adjust Seasoning:
Taste the chili and adjust the seasoning with additional salt, pepper, or spices if needed. - Serve:
Ladle the chili into bowls and top with your choice of toppings. Serve hot, alongside cornbread or crackers if desired.
