Ingredients
For the Biscuits:
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 1/2 cup (1 stick) unsalted butter, chilled and cubed
- 3/4 cup cold buttermilk
For the Sausage Gravy:
- 1 lb (450g) breakfast sausage (pork or turkey)
- 1/4 cup all-purpose flour
- 2 1/2 cups whole milk (or more for desired thickness)
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp freshly ground black pepper (or to taste)
- Salt to taste
Instructions
1. Prepare the Biscuits:
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
- Add the chilled butter cubes to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs.
- Pour in the buttermilk and mix gently until just combined. Do not overmix.
- Turn the dough onto a floured surface, gently pat it into a 1-inch-thick rectangle, and fold it over itself 2-3 times to create flaky layers.
- Use a round biscuit cutter to cut out biscuits and place them on the prepared baking sheet.
- Bake for 12-15 minutes or until the tops are golden brown.
2. Make the Gravy:
- In a large skillet over medium heat, cook the sausage until browned and fully cooked, breaking it into small crumbles with a spoon. Do not drain the grease.
- Sprinkle the flour over the cooked sausage and stir well to coat. Cook for 1-2 minutes to remove the raw flour taste.
- Gradually pour in the milk, stirring constantly to prevent lumps. Bring the mixture to a simmer and cook until the gravy thickens, about 5-7 minutes.
- Season with garlic powder, onion powder, black pepper, and salt to taste. Adjust seasonings as needed.
3. Assemble:
- Split the warm biscuits in half.
- Spoon the hot sausage gravy generously over the biscuits.
- Serve immediately and enjoy!
Optional Additions:
- Sprinkle with fresh parsley or chives for garnish.
- Add a pinch of red pepper flakes for a spicy kick.
