Classic Meatloaf Recipe
Ingredients:
For the Meatloaf:
- 2 lbs ground beef (preferably 80/20 for flavor)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup breadcrumbs (or crushed crackers)
- 1/2 cup whole milk
- 2 large eggs, beaten
- 1/4 cup ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1 tsp salt
- 1/2 tsp black pepper
For the Glaze:
- 1/3 cup ketchup
- 2 tbsp brown sugar
- 1 tbsp Dijon mustard
Instructions:
Step 1: Preheat Oven
- Preheat your oven to 375°F (190°C). Line a baking sheet or loaf pan with parchment paper or lightly grease it.
Step 2: Prepare the Meatloaf Mixture
- In a small bowl, combine breadcrumbs and milk. Let it soak for 5 minutes. This keeps the meatloaf moist.
- In a large mixing bowl, combine ground beef, soaked breadcrumbs, onion, garlic, eggs, ketchup, Worcestershire sauce, thyme, parsley, salt, and pepper. Mix gently until just combined. Overmixing can make the meatloaf dense.
Step 3: Shape the Meatloaf
- Transfer the mixture to the prepared baking sheet or loaf pan. Shape it into a loaf (if not using a loaf pan).
Step 4: Make the Glaze
- In a small bowl, mix ketchup, brown sugar, and Dijon mustard until smooth. Spread half of the glaze evenly over the top of the meatloaf. Reserve the other half for later.
Step 5: Bake the Meatloaf
- Bake in the preheated oven for 45 minutes. Remove from the oven and spread the remaining glaze on top. Return to the oven and bake for an additional 15–20 minutes, or until the internal temperature reaches 160°F (71°C).
Step 6: Rest and Serve
- Let the meatloaf rest for 10 minutes before slicing. This helps the juices redistribute, keeping it moist. Serve with your favorite sides.

- Meat Blend: A mix of ground beef and ground pork or veal adds extra flavor.
- Veggies: For added moisture and nutrition, consider finely grated carrots or zucchini.
- Make-Ahead: Meatloaf can be prepared ahead and stored in the fridge before baking.
