Ingredients
For the Grits:
- 1 cup stone-ground grits
- 4 cups water (or chicken stock for added flavor)
- 1/2 tsp salt
- 1 cup shredded sharp cheddar cheese
- 1/4 cup heavy cream or butter
For the Shrimp:
- 1 lb (450g) large shrimp, peeled and deveined
- 4 slices bacon, chopped
- 1 small onion, finely diced
- 1 bell pepper, diced (red or green)
- 2 cloves garlic, minced
- 1/2 cup chicken stock
- 1 tbsp lemon juice
- 1 tsp hot sauce (optional, for spice)
- 1/2 tsp smoked paprika
- Salt and black pepper, to taste
- 2 tbsp chopped fresh parsley (for garnish)
Instructions
1. Cook the Grits:
- Bring water (or chicken stock) and salt to a boil in a medium saucepan.
- Gradually whisk in the grits to avoid clumping. Reduce the heat to low and simmer, stirring occasionally, for 20 minutes or until the grits are creamy and tender.
- Stir in cheddar cheese, heavy cream, or butter until melted and smooth. Keep warm.
2. Cook the Bacon:
- In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set it aside, leaving the rendered fat in the skillet.
3. Sauté the Shrimp and Vegetables:
- Season the shrimp with salt, pepper, and smoked paprika.
- In the same skillet with the bacon fat, cook the shrimp for 1-2 minutes per side until pink and cooked through. Remove and set aside.
- Add the diced onion and bell pepper to the skillet. Sauté until softened, about 3-4 minutes. Add the garlic and cook for 30 seconds until fragrant.
4. Create the Sauce:
- Pour the chicken stock into the skillet, scraping up any browned bits from the bottom. Stir in lemon juice and hot sauce if desired. Let the mixture simmer for 2-3 minutes to slightly reduce.
- Return the cooked shrimp and bacon to the skillet, tossing to coat in the sauce. Heat through for 1-2 minutes.
5. Serve:
- Spoon the creamy grits into bowls.
- Top with the shrimp and sauce mixture.
- Garnish with fresh parsley and additional hot sauce if desired.
