Biscuits and Gravy Recipe

Ingredients

For the Biscuits:

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1/2 cup (1 stick) unsalted butter, chilled and cubed
  • 3/4 cup cold buttermilk

For the Sausage Gravy:

  • 1 lb (450g) breakfast sausage (pork or turkey)
  • 1/4 cup all-purpose flour
  • 2 1/2 cups whole milk (or more for desired thickness)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp freshly ground black pepper (or to taste)
  • Salt to taste

Instructions

1. Prepare the Biscuits:

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Add the chilled butter cubes to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs.
  4. Pour in the buttermilk and mix gently until just combined. Do not overmix.
  5. Turn the dough onto a floured surface, gently pat it into a 1-inch-thick rectangle, and fold it over itself 2-3 times to create flaky layers.
  6. Use a round biscuit cutter to cut out biscuits and place them on the prepared baking sheet.
  7. Bake for 12-15 minutes or until the tops are golden brown.

2. Make the Gravy:

  1. In a large skillet over medium heat, cook the sausage until browned and fully cooked, breaking it into small crumbles with a spoon. Do not drain the grease.
  2. Sprinkle the flour over the cooked sausage and stir well to coat. Cook for 1-2 minutes to remove the raw flour taste.
  3. Gradually pour in the milk, stirring constantly to prevent lumps. Bring the mixture to a simmer and cook until the gravy thickens, about 5-7 minutes.
  4. Season with garlic powder, onion powder, black pepper, and salt to taste. Adjust seasonings as needed.

3. Assemble:

  1. Split the warm biscuits in half.
  2. Spoon the hot sausage gravy generously over the biscuits.
  3. Serve immediately and enjoy!

Optional Additions:

  • Sprinkle with fresh parsley or chives for garnish.
  • Add a pinch of red pepper flakes for a spicy kick.
