Chicago Deep-Dish Pizza Recipe

Ingredients:

For the Dough:

  • 3 1/4 cups all-purpose flour
  • 1/2 cup yellow cornmeal
  • 1 1/2 teaspoons salt
  • 1 teaspoon sugar
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 1/4 cups warm water (110°F/45°C)
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons olive oil (for greasing the pan)

For the Sauce:

  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1 can (28 ounces) crushed tomatoes
  • 1 teaspoon sugar
  • Salt and black pepper to taste

For the Toppings:

  • 3 cups shredded mozzarella cheese
  • 1 pound Italian sausage, cooked and crumbled
  • 1 cup sliced pepperoni or other favorite toppings
  • 1/2 cup grated Parmesan cheese

Instructions:

  1. Prepare the Dough:
    • In a large bowl, mix the warm water and yeast. Let it sit for 5 minutes until frothy.
    • Add the flour, cornmeal, salt, sugar, and melted butter. Mix until the dough comes together.
    • Knead the dough on a floured surface for 5–7 minutes, until smooth and elastic.
    • Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1–2 hours, until it doubles in size.
  2. Make the Sauce:
    • Heat olive oil in a pan over medium heat. Add onions and cook until softened.
    • Stir in garlic, oregano, basil, and red pepper flakes, and cook for 1 minute.
    • Add crushed tomatoes and sugar. Simmer for 15–20 minutes, stirring occasionally. Season with salt and pepper.
  3. Assemble the Pizza:
    • Preheat your oven to 425°F (220°C).
    • Grease a 12-inch deep-dish pizza pan or cast-iron skillet with olive oil.
    • Roll out the dough into a circle, 2–3 inches larger than the pan diameter. Press it into the pan, ensuring the dough comes up the sides.
    • Layer the bottom with mozzarella cheese.
    • Add your cooked sausage, pepperoni, or desired toppings over the cheese.
    • Spread the prepared tomato sauce on top of the toppings.
    • Sprinkle grated Parmesan cheese over the sauce.
  4. Bake:
    • Place the pizza in the preheated oven and bake for 25–30 minutes, until the crust is golden brown and the cheese is bubbly.
    • Let the pizza cool for 5–10 minutes before slicing to allow the layers to set.
  5. Serve and Enjoy!
    • Slice into wedges and serve with a knife and fork for the ultimate Chicago deep-dish experience.
