Chicago Deep-Dish Pizza Recipe
Ingredients:
For the Dough:
- 3 1/4 cups all-purpose flour
- 1/2 cup yellow cornmeal
- 1 1/2 teaspoons salt
- 1 teaspoon sugar
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1 1/4 cups warm water (110°F/45°C)
- 1/4 cup unsalted butter, melted
- 2 tablespoons olive oil (for greasing the pan)
For the Sauce:
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1 can (28 ounces) crushed tomatoes
- 1 teaspoon sugar
- Salt and black pepper to taste
For the Toppings:
- 3 cups shredded mozzarella cheese
- 1 pound Italian sausage, cooked and crumbled
- 1 cup sliced pepperoni or other favorite toppings
- 1/2 cup grated Parmesan cheese
Instructions:
- Prepare the Dough:
- In a large bowl, mix the warm water and yeast. Let it sit for 5 minutes until frothy.
- Add the flour, cornmeal, salt, sugar, and melted butter. Mix until the dough comes together.
- Knead the dough on a floured surface for 5–7 minutes, until smooth and elastic.
- Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1–2 hours, until it doubles in size.
- Make the Sauce:
- Heat olive oil in a pan over medium heat. Add onions and cook until softened.
- Stir in garlic, oregano, basil, and red pepper flakes, and cook for 1 minute.
- Add crushed tomatoes and sugar. Simmer for 15–20 minutes, stirring occasionally. Season with salt and pepper.
- Assemble the Pizza:
- Preheat your oven to 425°F (220°C).
- Grease a 12-inch deep-dish pizza pan or cast-iron skillet with olive oil.
- Roll out the dough into a circle, 2–3 inches larger than the pan diameter. Press it into the pan, ensuring the dough comes up the sides.
- Layer the bottom with mozzarella cheese.
- Add your cooked sausage, pepperoni, or desired toppings over the cheese.
- Spread the prepared tomato sauce on top of the toppings.
- Sprinkle grated Parmesan cheese over the sauce.
- Bake:
- Place the pizza in the preheated oven and bake for 25–30 minutes, until the crust is golden brown and the cheese is bubbly.
- Let the pizza cool for 5–10 minutes before slicing to allow the layers to set.
