Classic Chili Recipe

Ingredients:

  • 2 tbsp olive oil
  • 1 lb (450g) ground beef (or ground turkey for a leaner option)
  • 1 medium onion, diced
  • 1 bell pepper, diced (red, green, or a mix)
  • 3 cloves garlic, minced
  • 1 (14 oz) can diced tomatoes (fire-roasted if available)
  • 1 (14 oz) can tomato sauce
  • 1 (6 oz) can tomato paste
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can black beans or pinto beans, drained and rinsed
  • 1 cup beef broth (or chicken broth for a lighter version)
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional, for extra heat)
  • 1 tsp dried oregano
  • 1/2 tsp sugar (to balance acidity)
  • Salt and black pepper to taste

Optional Toppings:

  • Shredded cheddar cheese
  • Sour cream
  • Chopped green onions
  • Diced avocado
  • Crushed tortilla chips

Instructions:

  1. Prepare the Base:
    Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced onions and bell peppers. Sauté until softened, about 5 minutes. Stir in the minced garlic and cook for another minute.
  2. Brown the Meat:
    Push the vegetables to one side of the pot and add the ground beef (or turkey). Cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat if needed.
  3. Add Spices:
    Sprinkle the chili powder, cumin, smoked paprika, cayenne pepper (if using), oregano, and a pinch of salt and pepper over the meat and vegetables. Stir well to coat everything in the spices.
  4. Build the Chili:
    Add the diced tomatoes, tomato sauce, tomato paste, and beef broth. Stir until combined.
  5. Add Beans:
    Stir in the kidney beans and black beans (or pinto beans). Add sugar to balance the flavors.
  6. Simmer:
    Bring the chili to a boil, then reduce the heat to low. Cover and simmer for at least 30 minutes, stirring occasionally. For deeper flavors, simmer for 1-2 hours.
  7. Adjust Seasoning:
    Taste the chili and adjust the seasoning with additional salt, pepper, or spices if needed.
  8. Serve:
    Ladle the chili into bowls and top with your choice of toppings. Serve hot, alongside cornbread or crackers if desired.
